Stout Pudding

For those of you enjoying winter weather, this stout pudding is perfect. We have just come out of our booze ban and I will be sure to stock up on beer. Not only for warming desserts, but to enjoy at the pool while we are still in the midst of our summer.

I am not sure why people are happy when they have slept like a baby. Babies don’t sleep through the night. They wake up needing feeding and changing and moms’ are so chuffed when they finally do sleep through. Last Friday night I slept like a baby, waking up every hour or so. Something I had eaten had made me really ill. And I spent most of the night awake. On Saturday I felt like a wreck, both physically and mentally. I was so exhausted and forced myself to get up. I know from past experience that I need to have a normal day. And then try and get proper sleep during the night. The first thing I did was a light training session. And then I started on my bread making and pastry baking. I relaxed in-between by binge watching a series.

By the time Dave got home late afternoon I was ready to just chill. And that we did, having a relaxed meal that took little effort on my behalf. The following morning I was still tired, and grateful for the breakfast out that we had planned. When we got home I finished off the baking which in hindsight I should not have left until the last minute. Dave and I had a quiet afternoon until the kids arrived. But, we had chocolate soup instead of a ganache tart for tea as it had not set. And after they left, another simple supper. I was still tired this morning, making me realize just how much one bad night can affect me. Do you sleep through the night, or like a baby?

Stout Pudding

Use a chocolate flavoured stout if you can find to emphasise the flavour

Makes enough for: 1 pudding

Ingredients

for the pudding

  • 50 g salted butter, plus extra for greasing
  • 20 g cocoa powder
  • 75 g fructose
  • 125 g self-raising flour
  • 90 mls milk
  • 1.25 mls vanilla extract

for the topping

  • 100 g coconut sugar
  • 15 g cocoa powder
  • 340 mls stout

Method

for the pudding

  • Preheat the oven to 180° Celsius
  • Place the butter into a glass bowl and melt in the microwave in 30 second bursts
  • When melted, add the cocoa and fructose and whisk to combine
  • Sift in the flour then add the milk and vanilla
  • Mix to combine then tip into a greased round, ovenproof dish
  • Flatten as best as you can with a spatula

for the topping

  • Place the sugar and cocoa into a bowl and whisk to combine
  • Pass through a sieve over the pudding base then pour the stout over the pudding
  • Place into the oven and bake for 40 minutes
  • Remove from the oven and leave to cool for 10 minutes before serving

  1. I just love your stout pudding (heart) dessert Tandy~ how sweet for Valentine’s Day or really any day one needs a pick-me-up! I totally sleep like a baby waking up every 2-3 hours. It’s awful! I wish it were different but I don’t want to be addicted to sleeping pills so I just deal with being tired all the time.

  2. This is a fascinating dessert! I’ve never used beer in a dessert. We have the best chocolate stout in Dublin that I’ll never forget. Glad your booze ban is over. Goodness. And by the way, you should be a stand-up comedian!

  3. It is very unusual for me not to sleep, Tandy. I can sleep anywhere, anyhow and any place. Terence can’t sleep if he is travelling, in a new place, or stressed. Luckily, nothing disturbs me. He sometimes takes sleeping tablets.
