These Ukrainian Yoghurt Pancakes come from Onwards. In her recipe Karen takes the batter and deep fries them, turning them into doughnuts. I stuck to the idea of the austerity she mentioned and cooked them on gas. They were perfect as is, and even better when topped with jam.

Last month I was invited to attend a Business Network meeting, being told it would help grow my business. I did not do any research into the group before attending the meeting and so I had no expectations. There was a cost involved for attending which I had not been told about upfront. But I arrived and paid it, hoping the expense would be worth it. As soon as I walked in I saw someone I knew. And straight away he told me that this was not the place for me to be. There is only one retailer in the group, and that is my target market as a wholesaler. I spoke to the person who had invited me, and told him my concerns. He assured me I would definitely gain more customers by being a part of the group via referrals.

The meeting included each person giving a 30 second ask for what they needed and who they were. Followed by two people giving 5 minute talks about their business. Breakfast was served 2 hours after we arrived, and as it hit the table, the visitors were called aside for the pitch. The aim of course was to get us to join the chapter, paying a monthly fee. The fee is not a nominal amount and one would need to generate a lot of business to justify it. Further, I cannot ascertain where this money goes. And I also know that I do not have 4 hours every week to give to this. I would love to be a part of an informal group that focuses on small businesses. And maybe this is something I can look for? But this group is just not the right fit for me.

Ukrainian Yoghurt Pancakes
Ingredients
- 180 g thick yoghurts
- 105 g flour
- 2.5 mls bicarbonate of soda
- 1 egg, lightly beaten
- 1 pinch fine salt
- 60 mls canola oil
Method
- Preheat the oven to 150° Celsius
- Place the yoghurt, flour, bicarbonate of soda, egg and salt into a mixing bowl
- Whisk until the ingredients are combined (the batter will be thick and does not have to be smooth)
- Place the oil into a heavy bottomed frying pan and heat over a medium temperature
- When hot spoon 30 mls of the batter into the oil and fry until lightly golden
- Turn with a palette knife and fry until lightly golden
- Once done, drain, place onto a baking tray and then put the tray into the oven to keep warm while you continue making the pancakes
- Once they are all done serve as is, or with jam or syrup, or a topping of your choice *

Today is my last day of work for 2023. Tomorrow has been declared a public holiday so we can celebrate the Springboks winning the Rugby World Cup. I will pop into my blog while I am on leave as and when I can.

The pancakes look similar to any I have ‘met’ anywhere in Eastern Europe . . . have not made any for eons but shall try your way next time . . . on a flat pancake pan 🙂 ! Have a most enjoyable time ‘off’ . . . !

I never thought about yogurt pancakes, but I can imagine the different flavor. I really like the idea!
Tandy, that group had to be a disappointment all around. Years ago I went to something that sounds just like it. A close friend invited me, praising the group. I was getting ready to move to that city, and she already lived there. So while I was in town for a job interview, I went with her to a meeting. It was exactly as you described. All the members were apparently very well-off too. One woman was in real estate and made a big push to sell me a house. But she was horrified at the idea that she might sell a home anywhere near my price range. No, not a fit for me either. Sending hugs.
I think you have to be well off to belong to these groups! And be time rich 🙂
Oh I haven’t had a deep-fried pancakes for ages. These look lovely! I personally love mine with some sour cream or sweetened condensed milk drizzle.
