Double Ginger Cake

Ginger forms part of my daily diet as I have a generous slice of it in my morning smoothie. I love the depth of flavour this spice adds to savoury dishes, and adore it in desserts. So, when Sherry posted her recipe for a double ginger cake, I printed it out straight away. And made it the following weekend. If you love ginger, then you have to bake this cake!

Dave and Eric had plans to go racing in Port Elizabeth. It was two weeks after we had been away, and Dave would get back the day before I left for Johannesburg. Usually when he is away I make all sorts of plans. But this time I decided to spend time on my own. In my head I had laid out all that I would do. Starting on the Thursday, I would invite a friend to join me for a drink after work, but before supper. And supper for all three nights would be exactly the same, scrambled eggs. On the Friday I planned to binge watch the TV programmes I have recorded that Dave is not interested in. And on the Saturday I was going to clean up the entrance hall and make space for a small bench. Sunday I would bake cinnamon scrolls, and pack for Johannesburg.

Well, this sounded great until Dave came home on Wednesday evening and told me he was not going away. I had already taken his suitcase out for him, and put the vanity bag and electrical stuff in it. So that was put away, and my plans all scuppered. It was lovely to have him home, but I felt like nothing on my checklist was done. The entrance hall still needs sorting out, and this is now a December plan. Out of all the things I wanted to do, the only thing ticked off the box was baking! Dave and I also did some shopping. I needed a T-shirt for Johannesburg as I only have one! And that would not suffice for 4 summer days. And Dave needed a pair of walking shoes for our overseas trip. Have you ever had plans change which meant a weekend alone was suddenly not so?

Double Ginger Cake With A Coconut Sugar Frosting

Ingredients

For the cake:

  • 100 g coconut sugar
  • 3 eggs
  • 150 g honey
  • 150 mls canola oil
  • 50 mls milk
  • 50 g fresh root ginger, peeled and grated
  • 250 g self raising flour
  • 20 mls ground ginger
  • 10 mls ground cinnamon
  • 5 mls ground cloves
  • 5 mls ground cardamom
  • 1 pinch fine salt

For the frosting:

  • 125 g full fat cream cheese at room temperature
  • 62 g softened butter
  • 50 g coconut sugar
  • 15 g icing sugar, sifted
  • 1 lemon, zest only
  • 25 g pistachios, roughly chopped

Method

For the cake:

  • Preheat your oven to 180° Celsius
  • Place the sugar and eggs into a stand mixer bowl and whisk until pale
  • Add the honey, oil, milk and fresh ginger and continue whisking until combined
  • Place the flour, ground ginger, ground cinnamon, ground cloves, ground cardamom and salt into a mixing bowl and whisk to combine
  • Add to the egg mixture and whisk until completely incorporated
  • Pour the batter into a 23cm lined round tin and place into the oven for 55 minutes
  • Remove from the oven and leave to cool for 10 minutes in the tin before turning out onto a wire rack to cool completely

For the frosting:

  • Place the cream cheese into a stand mixer bowl and whisk at low speed until smooth
  • Add the butter and whisk until smooth
  • Add the coconut sugar and icing sugar and whisk until combined and fluffy
  • Add the lemon zest and fold through
  • Ice the cooled cake, top with pistachios and refrigerate until devoured

  1. I love ginger, and pistachios and lots of icing!! Hubby went away twice in one week just after my eye op.! I was not impressed 🙂
