Smokey Red Pepper Dip

Do you need a dip that works stand alone or with something else? If the answer to this is yes, then you need to make my smokey red pepper dip. I have paired it with a butter bean hummus to make it less boring.

My worst chore is filing! This is something I reserve for when it absolutely has to be done. Like this morning! I have a drawer system next to my desk with different drawers for each type of filing that needs to be done. I will only tackle this task when the drawers are full. Or when I need to find a specific document. For the last two weeks I have been battling to close one of the drawers. But when I could not close the second one this morning I knew I had to do something about it. I put the huge pile of papers from the first drawer onto my desk. Chose a file for them and tossed the papers from the file into the bin. I then sorted out the documents into their categories and filed them away. The second drawer is not as easy.

These papers go into 5 different files. And each file is divided into a total of 9 sections. I sorted and filed using the description in each file as my guide. I am not brilliant at this task as when I got to the end I discovered at least 3 pages I had missed. And realized I needed a new category. But that has been left for another day, one where I either need something. Or the day before financial year-end. This recipe was a bit the same. I left it and left it until I absolutely had to make it. It goes part and parcel with a bean hummus to make a comprehensive dip. Frankly, bean hummus does not excite me very much. But this smokey red pepper dip will take it from being something boring to something exciting! So tell me, what is your least favourite chore?

Smokey Red Pepper Dip

Use this as a stand alone dip, or with hummus

Makes enough for: 1 batch dip

Ingredients

  • 3 red peppers, charred, peeled and deseeded
  • 2 cloves garlic, charred and peeled
  • 10 mls dried thyme
  • 2.5 mls flaked salt
  • 1.25 mls smoked sweet paprika
  • 2.5 mls tomato paste
  • 10 mls balsamic vinegar
  • 30 g walnuts, roughly chopped

Method

  • Roughyl chop the red peppers and garlic and place into stick blender jug
  • Add the thyme, salt, paprika, tomato paste, vinegar and walnuts
  • Process with the blender until you have a chunky texture

  1. I just love the idea of this smokey red pepper dip for chips and watching the big game on Sunday. Red peppers are my favorite vegetable and I can always get the kids to eat them. And to answer your question: Least favorite chore. Folding the kids clothes for sure! All the tiny socks get lost or stuck on other clothes and it seems to take me hours, bleh.

  2. I really like the idea of making this dip and pairing it with something else. I make a very similar dip but have never thought of pairing it. I will certainly give this a go.
