Vodka Pickled Cucumbers

I first made these vodka pickled cucumbers in 2024. They were served together with sardine rillettes, a recipe I got from Mimi. Since then, I have ensured that there is always a jar of them in my fridge. They go perfectly well with a cheese platter, and can be served with any charcuterie board you make.

When life takes over

I usually spend three Saturday’s every month working on recipes. And as I post two recipes per week, I try to get two done each Saturday. This will then put me ahead of the curve for when we go away. This year, I have not had every Saturday to myself. Our dog has needed to go to the vet for check-ups on a regular basis. She has torn her ACL and the vet wants to make sure she is healing and does not need surgery. I tried taking her during the week, but the morning spent at the office did not work out so well. She now cries every morning when I leave home! So, I am taking her on a Saturday morning. This once a month visit has now thankfully come to an end. And she does not need surgery which is a relief.

Living life

I am also trying to see friends and family over the weekend when Dave is at work. I used to delegate this to during the week, but it is not always feasible to do so. During the week leading up to the end of July I painted some of the walls in our house. I did the two guest bedrooms and the passage. My next task will be the lounge, but that can wait until we are on leave in December. I am going to have to start doing some recipe work during the week. This is not a big issue as I have the time, and just need the motivation. And needing recipes to share here is motivation enough. However, in the meantime I am sharing some recipes that have formed parts of other recipes. It is a bit of a ‘cheat’ from me, but a necessity.

Vodka Pickled Cucumbers

Keep a jar in your fridge to serve with a cheese or charcuterie platter
Recipe Category: Pickles
Makes enough for: 2 people

Ingredients

  • 30 mls apple cider vinegar
  • 30 mls Vodka
  • 30 mls fructose
  • 10 mls fine salt
  • 5 mls pink peppercorns
  • 2 mini cucumbers, finely sliced
  • 1 frond fresh dill, leaves picked

Method

  • Place the vinegar, vodka, fructose and salt into a sterilized glass jar
  • Put the lid on and shake the contents to dissolve the fructose and the salt
  • Remove the lid and add the peppercorns, cucumbers, and dill
  • Place the lid back on and refrigerate to allow the flavours to develop and use as needed

  1. Coming from the Baltics pickled cucumbers naturally are on the table three times a day and vodka also graces it – sometimes too often 🙂 ! However I have never prepared or eaten vodka pickled ones – or, for that matter, ones with pink peppercorns 🙂 ! A simple but interesting recipe to keep in mind!

  2. My cucumbers were TERRIBLE this year. They were so bitter that I couldn’t even eat them. I thought it was just me, then I insisted my son taste one, and he felt the same way. Next year, I’m going to grow a different variety and I am definitely going to try this.
